And down South, the flours are "softer" (lower protein) than up North. But the nice thing about King Arthur Flour is, our flour is THE SAME all over the country. So if you buy a bag of King Arthur in Coos Bay, Oregon, it'll be the same flour you buy in Montgomery, Alabama, or Portland, Maine. Consistency and quality are what make us more than "run of the mill"!
